Perfect for the weekend

If you are going to bake anything this weekend, I recomend this tasty blueberry cheese cake. I found this in Leila Lindholm`s wonderful book; "A Piece of Cake". This is my favourite cook book at the moment! Here`s the how it`s done:  

300 gr digestive crackers
150 gr butter, melted

"Smash" the crackers in little pieces , and mix it with the melted butter. Put in in the stove on 175 degrees for 10 minuttes. Let it cool down.

Topp:

600 gr Philadelphia cheese
2,5 dl kesam (or sour cream)
1 dl sugar
1 dl maisenna
2 ts vanilla sugar
3 eggs
1 dl cream
200 gr white chocolate
1,5 dl blueberries

Wip the cheese and kesam till it gets creamy, mix in sugar, maisenna and vanilla sugar.Wip in the eggs, one by one. Add the cream. Melt the chocolate in a waterbath, and add it. Add the mix onto the cold cracker mix, and sprinkle the blueberries on top. Put it in the stove for 40 minuttes, turn off the heat and let it stay in for another 30 minuttes.
